Sticky turmeric and ginger energy bites

Finding that most off the shelf energy balls are loaded with dates, a healthy London cafe chain asked me to develop an exclusive range. “Love to”, I said. Then they asked for a turmeric option. “Oh”, I said…

Spending a lot of time in South India, I’m long since sold on turmeric’s multiple health benefits, so put it in almost everything (dog barks in agreement). But it can be bitter when you use enough to actually do you good, as this cafe wanted. In fact, these turned out to be my favourite of the range, we have them on constant supply. Sweet, spicy, sticky and so easy my toddler ‘helps out’. Ideal snacks for little ones or as workplace or training pick me ups.

Sticky ginger and turmeric balls

Makes: 12

INGREDIENTS

1 cup cashews
1 cup ground almonds
1/2 cup dried apricots
1 tbsp ginger
1 dsp honey
2 tsp turmeric
Good grind black pepper

METHOD

Blitz all ingredients in a Magimix or blender until combined and cashews finely chopped.

Roll into balls – I find just smaller than a golf ball a good size. Chill in the fridge or freezer until set. Transfer to an airtight container
