Banana, almond & cardamom pancakes

These pancakes are seriously delicious and filling. Plus they’re easy. I’ve deliberately kept the prep (and dishes) to a minimum for a fuss free Shrove Tuesday pudding / supper, or Wednesday AM post Pancake Day breakfast. Almonds are packed with anti-oxidants, Vit E, fibre, magnesium and protein and are proven to reduce insulin and blood sugar levels after eating. As you’d expect, these little delights are also seductively, yet wholesomely, gluten, dairy and refined sugar-free, and a great option for all you paleo people out there.

Banana, coconut & cardamom pancakes

Makes 8 – 10 pancakes. Feeds 2

INGREDIENTS

1 egg, whisked
1 banana, mashed
4 tbsp ground almonds
2 tbsp desiccated coconut – or sub for 1 tbsp almond
1 tsp baking powder
16 cardamom pods, seeds removed and crushed – optional
1 tbsp almond milk, sparkling water or water
1/2 dsp coconut oil

To serve

1 lemon
Creme fraiche, Coyo coconut yoghurt (I love this!) or greek yoghurt
Maple syrup

METHOD

Whisk eggs in bowl, add in banana and mash with fork. Add in remaining ingredients, apart from coconut oil and toppings, and stir. Set aside for a couple of minutes for the baking powder to activate.

Melt coconut oil in a frying pan and maintain a steady medium to low heat. Dollop in 1 dsp scoops of your pancake mix. Fry until browned, around 1 – 1 1/2 mins on the first side and 1 minute on the reverse.

Serve in a stack, alternating between a squeeze of lemon and yoghurt between each layer. Drizzle with (mineral rich!) maple syrup and eat. So good.

Tip

Cardamom’s a bit like Marmite so drop this if not to your taste, I love cardamom but don’t always include it. I find the easiest way to remove the seeds is to bash the pods in a pestle and mortar until the husks separate themselves and can be easily removed, allowing me to crush the seeds to a fine powder.

Travel Pick: Riad Lolita, Tarifa

Worthy of it’s own post, Riad Lolita is one of my favourite Tarifa guesthouses. And I’ve ticked off my fair share of accommodation across multiple visits to Spain’s most southern tip – the mountains in the picture are Africa. My obsession with Tarifa can hardly have gone unnoticed (see Travel Pick: Tarifa, Andalucia). I may even have renovated my own little white washed Tarifa holiday house: La Casita Melo. My penchant for understated luxury may have been hinted at once or twice. Moorish mansion, Riad Lolita is the cherry on the cake. Here’s why:

Built in 1893 for the town mayor, this shrine to nineteenth century luxury retains the granduar and original features of its past: Marble floors and staircases; Moorish courtyards and tiles that prompted me to scramble for my credit card; and light flooding in from every angle through the seemingly endless windows and patio doors.

Converted from a private home last year (the layout remained the same), Danish interior design goddess Pia sourced most of the furnishings from Morocco. Synonymous with chic Tarifa, Pia oversees the creative direction of Tarifa’s more stylish apartments. A celebration of her paired back Scandi style with the architecture of the casco antiguo (old town).

The really good news? Pia believes that to keep people happy, “you need to give them more than they expect.” So, Riad Lolita is incredibly reasonably priced. Incredibly.

Moroccan suite

Riad Lolita was full when I travelled but Pia very kindly moved things around so I could spend 5 nights in this little beauty. It didn’t disappoint.

Moroccan suite 2 has two rooms: living area and a bedroom with further seating area and open plan bathroom. As with the rest of the house, large windows are in abundance; a godsend during hot summer months, though all rooms have AC. Both Moroccan suites have the advantage of their own entrances onto the street; ideal for nipping out for your morning cortado.

Pia sourced most of the furniture from Morocco; the headboard is covered in a rug and the carpet, a design The Rug Company would drool over. Needless to say, I’m now planning a Tangier van haul so I can replicate all of the above in my South West London basement bedroom. Minus the extensive windows, light and sunshine. Humph.

North and South rooms have an interconnecting door, should you go with a group. The tiles (and 70 euro p/nt price tag) got me in a heartbeat.

The master bedroom and kids room in the family suite, which comprises of four rooms, to include a living room and bathroom. Rarely are triple rooms this stylish. Take note, long lost travel buddies with babies!

The Penthouse

With two bathrooms, two bedrooms (or a double bed and sitting room), a kitchen and terrace, this is incredibly good value at 130 euro per night. As with the entire house, design hasn’t been compromised; mosaic tiles, a mix of antique furniture and comfort are in abundance.

With two sitting rooms, a large kitchen, terrace and even chill out hallways, Riad Lolita has ample living space outside of the bedrooms. This is actually quite unusual for Tarifa and  as such, it’s an ideal and very reasonable (500 euros per night for 9 bedrooms / 22 people) option for groups.

Gather & Gather: My day job

With all my eulogies on India, Spain, yoga and hot eating and travel spots, you could be forgiven for thinking my life is one long, gluttonous yoga retreat. It’s not. At least not all the time. I’m pleased to say I have a day job for which, like this blog, my gathering of said wholesomely seductive treasures and trends is quite fortuitous.

In fact, as Creative Director for Gather & Gather, that’s precisely what I’m tasked to do. Unless you’ve been holed up in an igloo, the food revolution to hit the UK over the past 15 years can’t have escaped at least a tiny part of your cognitive function.

Like or loathe them, celebrity chefs such as Jamie Oliver and Nigella (and their promotion of packed lunches from your travels) have helped propel our dinner party repertoire far beyond the realms of Dolmio and Pot Noodle. Once the underdog of Europe in terms of cuisine, London café concepts at least, are now some of the most innovative in the world in terms of ethical sourcing, quality, menu planning and understated brand design.

No-where is this shift more evident than in coffee shops. Glossy chains no longer cut it. Instead, the more discerning British public is paying a premium for farmers market styling, locally roasted coffee and sweet-corn fritters. Starbucks is being shunned in favour of independents sporting extensive chalk doodles and an Antipodean pierced and inked barista.

In fact, the recent rollout by Taylor Street Baristas of Harris & Hoole took a severe publicity beating when news of the chain’s Tesco backers called its non-corporate roots into question.

In true Wholesome Seduction fashion, health is no longer the preserve of mung bean munchers. Again, thanks to the likes of the super brand J’me and his travels, there’s a demand for intelligent menu planning which our insides love as much as our taste buds. Given that the free-from market is growing faster than any other category (up 300% in the last decade, according to Datamonitor), it’s probably time we took note from our forward thinking, hippy mums.

So in a nutshell, when I’m not performing pool-side yoga, I’m tirelessly crusading for wholesomely seductive eating and styling at Gather & Gather. Given the feedback from our recent brand launch, I think we might be on the right track. With the help of our street food friends and coffee gurus, of course.
